- 2 ripe bananas mashed
- 1 finely grated carrot
- 1/4 cup oil
- 1 tsp salt
- 1 cup nutty wheat flour
- 1/2 cup flour
- 1tsp baking powder
- 1tsp baking soda
- 1/2 cup brown/treacle sugar
- handful mixed seeds (flaxseed, sunflower)
- handful crushed pecan nuts/almonds
Combine mashed bananas, grated carrot, oil, and sugar. Fold in dry ingredients and mix. Spoon in muffin cups and sprinkle with seeds. Bake for 15-20 mins in oven preheated oven at 180C
*mixture can be stored in the fridge for a few days
